I've read the only difference between a yellow and red-meated melon is the presence of the anti-oxidant lycopene that is in the red melon and absent from the yellow. The same chemical is responsible for red in tomatoes. Regardless of the color of a melon, a good one is truly a sweet treat; however, the yellow melon is credited with a slightly sweeter, honey-like taste. I'm won't argue that one, for I've had my share of both and struggle to distinguish the degrees of delicious. I have heard that August 18 is scheduled as the first annual Yellow-Meated Watermelon Festival, and I for one am all for it. ...can't think of a better theme.
